4 The city’s community champions have been recognised for their outstanding work to enhance safety on the Gold Coast at an awards ceremony recently. Fight 4 Youth, Senior Police Liaison Officer Darwin Huang and the Gold Coast Youth Service Foyer Program were among those recognised for their contribution to the city at the biennial Safer Suburbs Awards held at HOTA. Mayor Tom Tate said these awards were a reminder of the strength of the Gold Coast community and the commitment we share to making it a safer city. “This year we had a total of 40 nominees across the three categories, and of such high calibre that it was difficult to choose the winners,” he said. “And when you take a close look at what these programs are achieving, for some of our most vulnerable residents, it’s important we take a moment to thank them and recognise their efforts.” The Safer Suburbs Awards is one of many City initiatives enhancing safety with commitments to expand the Safety Camera Network, increase the number of publicly available defibrillators and enhanced graffiti reduction programs. Each club teaches prepared speeches based on a set of learning ‘Paths’ which have five sections to assist you to learn the different aspects of public speaking, each of these sections you will give a prepared speech based on the teaching of the lesson and afterwards you will be evaluated, both verbally and also a written evaluation, by an experienced Toastmaster who will mention points for improvement. Clubs also have a section called ‘Table Topics’ which is where you learn the skills in impromptu speaking. Other skills learnt in Toastmasters Clubs are leading and running a business style meeting. I can assure you meetings are not boring, we always have a lot of fun. Each year all clubs hold speech contests, there are four contests held, namely, International Speech Contest, Humorous Speech Contest, Evaluation Contest, and Table Topics Contest. Winners of these contests can go onto Area, Division and Region Area contests, with the winner of the regional International contest going on to compete against all other Regions throughout the world culminating in the Final of the International Contest to be held each year at the world head quarters in America. Toastmasters International, a not for profit organisation, was started in America in 1924 by a Ralph Smedley, and has just celebrated it’s 100th anniversary, over these years it has helped over one million people gain self-confidence and leadership skills and currently has over 14,000 clubs with over 500,000 members worldwide. Our roadside trees and turf are parched. Our gardens are suffering. Trees are dropping leaves as though it’s an English autumn, and we need shade. Nectar is drying out, and the flowers are falling to the ground. Birdlife and other wildlife are affected. Allowing a garden to deteriorate may affect human comfort and can be costly. Real estate studies show that a well-tended garden, or proximity to quality parklands and public gardens, increases home values by 10 to 25 per cent. Spending some time keeping your garden healthy is worthwhile. Here are some tips to keep your garden healthy through this dry spell. Trees first…they take years to mature. Their loss is the hardest to replace. Water less frequently, but deeply, and to the edge of the root zone or foliage drip line. Well-composted organic matter absorbs water and helps soil retain moisture. Your thirsty garden can’t get enough of it. Never mulch over dry soil; water the soil deeply first. Gardening Mulch is great, but look to see if it is creating an impervious barrier to water penetration. Don’t go too deep and avoid mounding mulch close to the trunk. Rake it back, check if watering has actually penetrated beneath the mulch to the soil below. The tannins in some woody mulches create a hydrophobic barrier. Direct the hose to soil, not foliage, using gentle water pressure. Let it soak in, Use an organic-based product if applying a soil wetting agent. The product labels will inform you. Also, use seaweed extract to make healthy, strong roots. Water before breakfast or after dinner, as this is when evaporation levels are at their lowest and the soil will remain moist longer. Keep your lawn a little longer than usual so the leafy foliage keeps the roots shaded. Lawns do need some water. Check pots for moisture. If they dry out fully a couple of times, the potting mix may become hydrophobic. Any water you apply will slip down the inside of the pot. For small pots, a plunge in a tub or a large bucket may rectify. For large pots, try a wetting agent. Fill birdbaths or saucers with fresh water on the ground daily for birds and small native animals. Make sure it’s in the shade, and add a rock for creatures with short legs. They will feel safer if there is a shady perch close by. Bees and butterflies drink from wet sand or soil in a large tray or saucer. Drain. Meanwhile, pat haloumi dry with paper towel. Sprinkle with spice mix. Spray a non-stick frying pan with oil. Heat pan over medium heat. Cook haloumi 1-2 minutes each side or until golden. Set aside. Spray pan with oil again. Cook zucchini 1-2 minutes until just coloured. Combine couscous, zucchini, tomatoes, parsley and mint in a large bowl. Season well. Combine tahini, yoghurt, garlic and lemon rind in a small bowl. Season. Add lemon juice to taste. Divide salad among serving bowls or arrange on a platter. Top with haloumi and pomegranate. Drizzle with dressing. Serve with pita. Easy Italian Pasta Salad Prep 15m | Cook 10m | Serves 6 • 200g dried farfalle (bow-tie) pasta (or other short pasta shape) • 150g green beans • 75g (1⁄4 cup) bought basil pesto • 2 tsp extra virgin olive oil • 1⁄4 cup fresh basil leaves • 6 radishes, thinly sliced • 200g baby bocconcini • 1⁄2 small radicchio lettuce, coarsely chopped • 200g tomato medley mix, sliced Garlic dressing • 100ml extra virgin olive oil • 60ml (1⁄4 cup) red wine vinegar • 2 garlic cloves, bruised To make the garlic dressing, place all the dressing ingredients in a jar and seal tightly. Shake until combined then season. Set aside to infuse. Cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente, adding the green beans in the last 3 minutes of cooking. Refresh under cold running water then drain well. Cut the beans in half lengthways. Transfer the pasta to a large bowl. Add the pesto and oil. Toss until the pasta is well coated. Arrange the pesto pasta down the centre of a 36cm oval serving platter. Arrange the basil, radish, bocconcini, radicchio, tomato and beans in rows on either side of the pasta. Remove the garlic cloves from the dressing. Drizzle twothirds of the dressing over the pasta salad and toss until combined. Divide among serving plates and serve with the remaining dressing on the side.
