17 Peach, Almond and Yoghurt Cake • 220g unsalted butter (Butter IS best) • 250g caster sugar • 1 tsp vanilla • 3 eggs • 300g SR Flour • 50ml milk • 250g natural yoghurt • 1 tsp amaretto or other liqueur (optional) • 450g small fresh peaches, stoned and chopped (I’ve used tinned peaches and it works quite well – Discard juice) • 50g flaked almonds • 1/2 cup extra natural yoghurt – extra • ½ cup cream Preheat oven to 170deg. Grease a 23cm springform tin and line the base with non-stick baking paper. Cream butter and sugar till fluffy. Add vanilla, then eggs one at a time, beating well after each addition. Add ½ the sifted flour, milk and ½ the yoghurt – beat for about 1 minute. Add remaining flour and yoghurt, add liqueur if using any, and mix. Fold in the chopped peaches. Pour mix into prepared tin and scatter almonds on top. Bake for 1½ hours. (If you find the cake is browning too quickly, cover with some aluminium foil). Remove from the oven and leave in tin to cool. When serving, beat the extra yoghurt and cream in a bowl till thick. Serve on the side. This is a very dense cake and would be suitable for a dessert. Walnut Coffee Cake Funny thing is – there’s no coffee in it! However, a slice of this is good with a cup of coffee. 2 Tbsp Softened butter ½ cup sugar 1 egg, beaten ½ tsp vanilla Pinch of salt 1 cup S.R.
