9 Oxenford Neighbourhood Watch As the weather starts to cool off a little and we head towards autumn, it’s a great time to check in on your personal, home and community safety. A few simple steps—like locking your doors and windows, checking smoke alarms, keeping your letter box cleared, and keeping an eye out for your neighbours— can make a big difference. Changing Weather Events Severe storms can hit the Gold Coast unexpectedly, so make sure your emergency kit is stocked and up to date and your gutters are clear. If you’re heading out, make sure you check for changing weather conditions, especially if you’re driving on roads that become slippery or walking with unexpected weather changes which can catch you off guard. Email Scams Email compromise scams are a growing issue and can affect anyone in our neighbourhood. These scams often involve criminals pretending to be a trusted person or organisation—such as a bank, business, service provider, or even a neighbour—to trick people into sending money, sharing personal details, or clicking unsafe links. The emails can look very convincing and often create urgency, pressuring you to act quickly before you’ve had time to think. Neighbourhood Watch encourages everyone to slow down and double‑check before responding to unexpected emails, especially those asking for payments, gift cards, login details, or changes to bank information. Always look carefully at the sender’s email address, be cautious of unusual wording or urgent requests, and never click links or open attachments if you’re unsure. If something doesn’t feel right, verify the request by contacting the organisation or person directly using a trusted phone number—not the one in the email. If bank details have changed, please ensure you verify this before making payment, do not use numbers on email, invoice of sms. Use trusted numbers you have saved or google them. Never provide bank details to others. By staying alert and talking about these scams with family, friends, and neighbours, we can help protect each other and keep our community safe. Stay safe, look out for each other, and see you at the next meeting! • 1 tbsp olive oil • 2 tsp fennel seeds • 2 garlic cloves, finely chopped • 4 x 300g chicken breast fillets • 200g cottage cheese • 55g (1/2 cup) shredded light mozzarella • 1 tbsp basil pesto • 40g baby spinach leaves • 400g vine-ripened tomatoes • 2 bunches broccolini Preheat oven to 200C/180C fan forced. Line a large baking tray with baking paper. Place 1 tsp oil, 1 tsp fennel seeds and half the garlic in a large bowl. Season and stir to combine. Split each chicken breasts horizontally, without cutting all the way through. Add chicken to garlic mixture and toss until well coated. Place cottage cheese, mozzarella, remaining fennel seeds and remaining garlic in a medium bowl. Season and stir to combine. Lay chicken on a work surface. Spread 1 tsp pesto over one cut side of each chicken breast. Top with one-quarter of the cheese mixture and then one-quarter of the spinach leaves. Fold chicken over to enclose the filling and secure using toothpicks. Heat remaining oil in a large frying pan over high heat. Cook chicken, in batches, for 2-3 minutes on each side or until golden. Transfer chicken to the prepared tray. Add tomatoes to the tray and bake for 10 minutes. Add broccolini to the tray and cook for 10 minutes or until the chicken is cooked through and the vegetables are tender.
